What you can expect

  • Welcome to Santa Catarina Barahona, where you will cook as our Mayan grandmothers did. I learned this cuisine from my grandmother, and today I share it with 7tigo: fresh ingredients from the local market, a clay comal and firewood, a grinding stone, and recipes that have been passed down from generation to generation.

    Choose from one of 4 menus of authentic dishes and cook it with your own hands from scratch:
    IMPORTANT: The entire group must choose the same menu for this date. Out of respect for time and traditional cuisine, we only prepare one menu per 3-hour workshop.
    Menu 1 - Sacatepéquez Classic
    The national dish of Guatemala. Pepián in a thick sauce made from roasted seeds.
    Includes: Pepián + Homemade tostadas + Banana rellenos + Handmade tortillas + Fresh lemonade or Jamaica

    Menu 2 - Flavours of the West
    Traditional recipe from Huehuetenango. Green jocón with fresh herbs.
    Includes: Guatemalan tacos + Jocón + Mole + Handmade tortillas + Fresh lemonade or Jamaica

    Menu 3 - Authentic Kaqchikel Cuisine
    Ancestral dish of the region. Subanik wrapped in maxán leaves.

    Menu 4 - Ancient Tradition
    The party dish. Three-meat stew in tomato sauce and spices.

    More than a cooking class, Utum is a close encounter with Mayan culture. I will teach you the meaning of each ingredient, we will grind on stone, and you will share the table as a family. You'll take away new skills and a taste of home.

    Workshop note: Out of respect for time and traditional cuisine, we only prepare one menu per group in each 3-hour session. This way, we can cook at a leisurely pace, share the table together, and ensure that everyone enjoys the full experience.
