Upon arriving at the winery, tourists will be welcomed in the park with a cup of coffee in the winter months or with a 'Medio y Medio' (a traditional Uruguayan drink) in the summer months.
Next, the winemaker will share the history of the family business, from its beginnings to how it has evolved over time. Next, you will visit the Tannat vineyard, Uruguay's emblematic grape variety. Continuing your tour of the winery's facilities, you will see the production plant and its machinery, and enter an original tank from 1930. We will then proceed to the cellar, where we have the largest number of display barrels in Uruguay, dating back to 1940. This is the barrel cellar where we produce our Jerez Anticuario and where our Reserva and Gran Reserva wines age, as well as the cellar where our natural sparkling wine, Fond de Cave, rests, making it the largest active underground cellar on the continent. You will also receive a master class on the disgorgement of sparkling wine using the machinery we employ in this process.
Finally, you will visit the museum of the historic San Javier Winery, dating back to 1820, where we have wines from 1967, 1978, and beyond.
The tasting and lunch will take place in the winery's underground cellar.
The wines you will taste are as follows:
Glass of Medio y Medio
Premium Sauvignon Blanc
Fond de Cave Chardonnay
Merlot Fond de Cave
Tannat del Museo
Fond de Cave Sparkling Wine
Jerez
3-course lunch: starter, main course, and dessert
