Here, you will witness first-hand the remarkable transformation of 50 litres of fresh sheep's milk into two wheels of traditional pecorino. Your guide will walk you through each stage of the process, explaining the subtle differences between Pecorino Sardo and Pecorino Romano, and revealing why mould is not only harmless but essential to the ageing process and depth of flavour.
You will also discover how ricotta is crafted from the whey left over after cheese production — a true lesson in zero-waste, sustainable farming that has defined Sardinian rural culture for millennia.
After the cheese-making demonstration, you are invited to explore the rest of this beautiful working estate, where pigs, horses, wheat fields and a family vineyard paint a picture of authentic, self-sufficient island life. The tour concludes with a lunch featuring a charcuterie board of farm-produced cheeses and cured meats, a first course made with the estate's own wheat, and of course, wine from the family vineyard.
