That of the norcino, is an ancient craft, and Umbria, in particular, has managed to make it a real culinary art renowned since Roman times. We will have a guided visit to a prestigious farm near Assisi, and there we will learn the secrets of this culinary tradition: the anatomy of the pig, the basic techniques of cutting the pig, processing of meat up to the production of sausages, preservation, salting, and ageing of meat. At the end of the lab, we will have a well-deserved lunch with the results of our work accompanied by other Umbrian typical products! After lunch, we will reach Assisi, Franciscan place par excellence not only in Umbria and Italy, but all over the world. We will meet our private guide who will take us on an interesting guided tour of this wonderful ancient village, to discover the history of Saint Francis while admiring the beauty of the numerous monuments, churches, and lovely alleys of Assisi: Piazza del Comune, Basilica di Santa Chiara, and many others. We will then reach the beautiful Basilica of San Francesco, where the remains of the Saint rest, and we will have the chance to visit it. Audioguide included.
