Next comes a tasting of local cured meats, accompanied by the traditional twisted bread, “coppia,” and two first courses that are emblematic of Ferrara's cuisine: pumpkin cappellacci with butter and sage or meat ragù, and pasticcio di maccheroni, a pasta heart filled with a white mushroom and truffle ragù, encased in a sweet puff pastry shell. All of this will be accompanied by a glass of aromatic local wine, one of the renowned “vini delle sabbie” from the Bosco Eliceo area.
