The first part of the activity is dedicated to discovery. We will guide you through our historic attics, where the pure mountain air meets the enveloping scent of centuries-old wood. You will visit the traditional cellar and our exclusive “Cavò”, the sancta sanctorum where the oldest and most precious reserves rest. Here, your guide will explain in detail the fascinating decanting process and the secrets of an ageing process that has been passed down from generation to generation.
After the cultural tour, take a seat in our dining room for the highlight: a guided food tasting structured like a real traditional meal. You will savour a 6-course menu, specially designed to enhance the different ages of our Balsamic Vinegar, from 6 years to an extraordinary 50 years of ageing.
The gastronomic journey includes local delicacies: 36-month Parmigiano Reggiano, handmade tortelli, a freshly prepared gourmet omelette, fresh seasonal vegetables with a pinzimonio dip, and, to finish, a delicious handmade gelato enriched with precious drops of balsamic vinegar.
