What you can expect

Gnocchi sounds like the kind of thing only Italian grandmothers can pull off. Chef Christine is about to prove that very wrong, and make it genuinely fun in the process. In this laid-back, beginner-friendly class you will go from a pile of Russet potatoes and flour to a plate of pillowy homemade gnocchi tossed in a brown butter sauce with crispy sage, black pepper and a finish of Parmesan and fresh chives that makes the whole dish sing. Along the way you will learn how to work a gnocchi dough, shape it properly and nail the brown butter timing, that precise moment between golden and gone that makes all the difference. Come as a complete beginner. Leave as someone who makes gnocchi from scratch now. Louisville dinner parties will never be the same.

Activity itinerary

Warning: after this class, store-bought gnocchi will never feel the same again. Chef Christine will walk you through making pillowy, homemade gnocchi from scratch and tossing it in a brown butter sage sauce so rich and nutty it might just become your new favourite thing to cook on a weeknight. You will start by mashing Russet potatoes and combining them with flour and eggs into a proper gnocchi dough, then knead and shape it into delicate pasta dumplings the way it has always been done. While those cook, you will learn how to brown butter until it hits that deep, caramelised sweet spot, season it with sage and black pepper and fold in your finished gnocchi before finishing with a generous sprinkle of Parmesan and fresh chives. The setting is casual, Chef Christine makes every step feel completely doable and the only pressure in the room is deciding whether to go back for seconds. No experience needed. Just show up hungry.
