The adventure starts with an introduction to the heart of the operation: the herd. You will head out directly into the lush pastures to meet the lactating goats as they graze freely. Here, you will enjoy genuine interaction with the animals and learn how pasture-feeding creates a superior flavour profile. Next, you will visit the nursery to cuddle and bond with the incredibly playful baby kids.
After meeting the animals, you will step into the shoes of a traditional Italian craftsman. Join your hosts and fellow travellers for a hands-on workshop to witness the traditional methods of curdling and shaping. You will participate directly in the artisanal process, learning the precise techniques used to create premium dairy, and discover how different ageing methods yield completely unique textures.
The grand finale is a guided sensory tasting path. You will be served a curated platter featuring five distinct varieties of artisanal cheeses, handpicked based on the season. Your tasting journey may include a velvety fresh robiola, a smooth caciotta infused with blueberries or sun-dried tomatoes and local figs, a creamy brie, or a deeply complex wheel aged for 14 months.
As you try each piece, your host will describe its unique characteristics. To perfectly complement the robust flavours, your platter is paired with natural mineral water and a glass of rich Aglianico, a full-bodied local red wine.
