On this guided visit of our mill, you'll learn in detail about all the production phases, from the reception of the olives at their optimum point of ripeness to their processing, extraction, preservation, and final packaging. Throughout the tour, we'll explain each stage of the process so that you understand how the quality of the oil is defined from the start and how each decision influences the final result.
The experience not only focuses on the production side, but also on knowledge of the olive oil sector. In a museum room with old extraction systems, you can enjoy an educational presentation on the history of olive oil, its evolution, current market trends, the different qualities available, and the importance of the primary sector in Spain. This space allows you to connect tradition with innovation and understand the cultural, economic, and gastronomic relevance of extra virgin olive oil.
To conclude, we will conduct a guided tasting of our oils, where you can sample different varieties and learn to identify their aromas, nuances, and sensory characteristics. We'll teach you how to differentiate them like a true expert, understanding how factors such as the olive variety, the production process, and the time of harvest influence them.
The experience culminates with a food tasting specially designed to highlight the qualities of each oil through different pairings. You can enjoy fresh tomato with our Manzanilla variety oil, local artisanal cheese with Cornicabra, avocado with anchovy paired with Arbequina, lacón (pork shoulder) with Picual, and pork loin enhanced with Cornicabra. To top it all off, we'll taste a chocolate dessert paired with Arbequina, a surprising combination that showcases the versatility of extra virgin olive oil in gastronomy.
