We will meet at a location in city centre and head to a market to do our shopping together.
Then we will head to our village, located 20 minutes from the city centre.
We'll start by enjoying chocolate with bread. We will then prepare our breakfast: tortillas, memelitas, tetelas, and empanadas, as well as three traditional molcajete sauces. During the process, we will explain the flavours, techniques, and traditions associated with the ingredients and dishes.
Now it's time to enjoy breakfast! We will talk about Oaxacan culture and the history related to its cuisine.
We will now prepare our lunch: yellow mole, green mole, black mole, or coloradito mole.
The goal is to understand the flavours, names, differences, and how ingredients can be substituted when we don't have them on hand.
