Your adventure begins in the heart of Florence, where you’ll meet the chef and head to Sant’Ambrogio Market (included only in the 9 AM session). This lively market is a favourite among locals for its fresh fruits, vegetables, meats, cheeses, and other top-quality ingredients. After selecting everything needed for the class, it’s time to return to the kitchen and start cooking.

Aprons on and hands in the dough! First, you’ll prepare the sauces, as they take the longest to cook. A rich ragù and a classic tomato sauce will pair perfectly with your homemade pasta. As the sauces simmer, you’ll begin making the pasta dough from just eggs and flour, following the chef’s expert guidance. Once the dough is smooth and elastic, it will need to rest before shaping—giving you the perfect chance to move on to dessert.

Next, you’ll learn to make tiramisù, Italy’s most famous dessert. The chef will guide you step by step in preparing the creamiest mascarpone filling and assembling the perfect tiramisù. While it chills in the fridge, take a short break to enjoy a selection of Tuscan starters and hear fascinating stories about Italian culinary traditions.

Now, it’s time to shape the pasta! You’ll make two classic types: tagliatelle, long, ribbon-like noodles, and ravioli, stuffed with fresh ricotta cheese. Under the chef’s supervision, you’ll master the art of rolling, cutting, and filling the pasta like a true Italian cook.

Finally, the best part—tasting your creations! Sit down and enjoy the delicious meal you’ve prepared, paired with a glass of house wine.
