• Making primo sale cheese
You'll observe the milk coagulation process and the subsequent pressing that gives rise to a fresh, simple, and authentic cheese.
• Explanation of the curd process
You'll learn about the key moment in milk transformation: from coagulation to breaking the curd, including the techniques, times, and tools used in the dairy tradition.
• Making stretched-curd cheese
You'll watch the pasta being spun, a fascinating stage in which the curd is worked with hot water until it becomes elastic and moldable.
• Mozzarella
You'll see the manual cutting and shaping of fresh mozzarella, a symbol of Italian culinary excellence.
• Burratina
