    At Bottega Minotti Parioli, we invite you to discover a unique gastronomic heritage, born from the revival of age-old traditions and respect for animal welfare. This guided food tasting celebrates the territories of Ciociaria, the Comino Valley, and the Reatine Mountains, offering a technical and organoleptic analysis of rare and award-winning products.

    The Art of Pairing: The Tasting Journey
    The heart of the experience is the “pairing” designed between eight excellent dairy products and three creations from the Alta Quota Brewery in Cittareale, where the altitude of production positively influences the aromatic profile of the beers.

    The route is structured in three acts:

    • Fresh Cheeses and Principessa Beer: We will start with the delicacy of Buffalo Ricotta and the noble richness of handmade Stracciatella (Azienda Nonna Pitta). The pairing with our Strong Golden Ale enhances the notes of ripe yellow-fleshed fruit.

    • Semi-matured cheeses and Omid Beer: We will continue with the truffled Marzolina di Capra (Azienda Capramara) and the original Pecorino alla Cera d'Api (Casa Lawrence). The texture of these cheeses pairs well with the Strong Dark Ale, with its strong notes of liquorice and caramel.

    • The Matured Cheeses and the White Beer: We will conclude with the intensity of the Pecorino di Picinisco PDO aged in a pit and the Stagionato di Capra alla cenere. The freshness of our citrusy and spicy Hoppy Blanche made with spelt perfectly balances the spiciness and primordial scents of these cheeses.
      Details that make the difference

    Each platter is enriched with orange and chestnut honey, artisanal pickled vegetables and red onion compote in collaboration with the Quattrociocchi company.
    All this is accompanied by the fragrance of bread made from ancient grains from the Micropanificio Agricolo Triticum.
