Begin your 2-hour boutique small-group gourmet tour by meeting your guide and learning about the origin, classification, and regional faction differences of traditional Chinese marinated food.

Stroll through Shanghai’s historic old street food blocks, experience the cross-regional inheritance and integration of traditional Chinese marinated food culture, and taste three distinctive cross-regional braised delicacies with unique flavour characteristics.

Taste Shanghai Zao Lu, uniquely marinated with fermented glutinous rice wine, featuring an elegant wine aroma and refreshing non-greasy taste. Try Chaoshan Cantonese-style braised food, which follows ancient Lingnan craftsmanship, with a moderately salty and fresh taste and tender meat texture, perfectly retaining the original flavour of ingredients.

Finally, taste traditional Minnan old-brine delicacies, which inherit century-old exclusive recipes, with a rich sauce aroma, mellow taste, and long aftertaste.

To upgrade the authentic gourmet experience, every portion of the three classic braised delicacies is paired with a classic Chinese beer. The crisp and refreshing local beer can perfectly cut through the slight greasiness of Zao Lu, balance the savoury taste of Cantonese braised food, and elevate the rich sauce flavour of Minnan old-brine, restoring the most authentic Chinese street food pairing custom.

During the walking transfer between each tasting spot, the guide will elaborate on the essential differences between three core marinating techniques: wine marinating, soup braising, and old-brine soaking. Deeply analyse the flavour aesthetics of Jiangnan, Lingnan, and Minnan cuisines, systematically distinguish the taste characteristics and cultural connotations of different braised food factions, and fully understand the profound heritage of Chinese marinated food culture.
