We will begin by visiting a nearby olive grove to give an introduction to the landscape of Jaén, its olive groves, varieties, etc. Afterwards, we will return to the olive mill, where we will give a brief introduction to the different types of oil produced in an olive mill: how and why each of them is made. We will then go inside to visit the old olive mill, where oil was produced 25 years ago, with its traditional press systems, fibre mats, and more. We will also watch an interesting projection showing the traditional production systems from the 1950s. We will talk about conservation in the old cellar and watch a current video showing how the olives are harvested and how the fruit is handled. Next, we will move on to the modern factory, where we will learn about today’s technology and modern systems: centrifugation, malaxers, by-products, and more. We will finish the visit on a high note.
