Sarde a beccafico, scented with citrus fruits, pine nuts, and raisins, tell the storey of the encounter between popular taste and aristocratic influences. Soft and tasty sardine patties elevate a humble ingredient, turning it into excellence. There's no shortage of fresh, simple, and genuine potatoes, and caponata, the undisputed queen of the Sicilian table, with its perfect balance of sweet and sour, fried aubergine, celery, olives, and capers.
