We will use products entirely of plant origin. The course begins with a theoretical session, during which students are introduced to the history and importance of gnocchi and ice cream in Italian culture. Next, students learn to select the right potatoes for making gnocchi, to ensure the ideal consistency. The lesson covers every step of the process: from cooking the potatoes, to forming the gnocchi themselves. At the same time, the course is dedicated to the preparation of Italian ice cream. Here, students discover the science behind creating creamy, flavourful ice cream, learning to balance ingredients like milk, cream, sugars and natural flavours. The course offers the opportunity to experiment with different flavours and ingredients, encouraging creativity and innovation. Recipes will be provided to you after the class, ensuring you can recreate these two simple delights at home too. Your dietary needs are not a problem for us: our courses are also vegetarian, vegan, gluten and/or lactose free on request and with always local, fresh and seasonal ingredients.
