This is a beautiful set up, a former carob farm in the Sicilian countryside converted to a hotel and spa. It is like a film set, its stunning. We had a lovely stay here. My criticism would be that the room was not as smart as I expected. The shower curtain was mouldy, one of the lights did not work and although spacious, our room had nowhere to sit. It would have been nice to have a balcony or an area to just sit and appreciate the surroundings. The staff are lovely and help wherever they can. There is a spa but it did not seem to be really functioning. The hotel should put more info in the rooms about the treatments on offer, the costs and timings etc. It's a lovely place and needs to promote itself more to its guests.

Beautiful Retreat
We enjoyed staying in this lovely hotel. It used to be a mill and has been wonderfully restored. The staff were very helpful, accommodating and friendly. Dogs are super cute!

Superb hotel in a lovely location.our room was huge situated on the second floor,with views across the fields.there is only 15 rooms in this old converted farmhouse,so most of the time we had the pool to ourselves.the food was quality and plenty of it and nothing was too much for the staff if we needed anything.we were part of the family which included playing with the dogs and birthday parties.on the middle week end we were invited to a family birthday party at the hotel.a fantastic evening.on our last day we had a few hours to wait for our flight,but the manager said there was no rush we could leave when we were ready.fantastic holiday,lovely people,marvellous location.

Great buildings
Hotel is a conversion from an old farm and it is brilliantly done. Grounds and pool are also very attractive.

A fantastic host and someone who has created the most amazing hotel. It may be slightly out of the way but it is well worth the effort. Great food and an amazing pool. You will not want to leave. I wish more people would create such an experience.

Peace, Quiet, Character and Charm
This year we visited Borgo del Carato four times. The second we walked in on our first visit and feasted our eyes on its charming courtyard, the beautiful dining hall and lounge and the magnificent pool we knew it was the perfect place for us to get married. This is an old hamlet, tastefully and carefully restored and run as a sort of boutique hotel by its wonderful owner, Luigi, who works extremely hard to ensure that all his guests have a pleasant and relaxing stay. It is located in the middle of nowhere, with only the sounds of the cows, goats and horses in the surrounding farms interrupting the silence, making it the perfect getaway from the hustle and bustle. Chef Alessio is creative and obliging, and our lunches and dinners there were always mouthwatering. We left our wedding dinner for 84 guests on his capable hands and we were blown away- nothing but complements for this talented young man. The rooms are beautifully done up whilst maintaining many of the original features and they are comfortable, with good quality mattresses ensuring a great night's sleep. the staff are polite and helpful, including one particular waitress, Giusi, whose patience and care were commendable. Nothing but praise for this wonderful little gem that we are so fortunate to have discovered. We look forward to visiting each year.

Updated upscale villa in peaceful countryside.
This is an amazing setting and facility out in the hills up from Siracusa. The 1500 year old structure has been redecorated and is undergoing additional refurbishment. It seems to be run by a family and they had a wedding booked for one day of our stay. We arrived late evening and they treated us very hospitably. Our room was spectacular wth a general seating area outside the door that we essentially had to ourselves. Bathroom facilities were great. Weather was very hot but A/C worked well. We chose to eat here because it was removed from a central location, which we preferred. Food was very good, charming staff. Pool lovely and refreshing. Parking fine: we felt safe out in the country.

Beautiful converted manor house
If you like converted old buildings in beautiful peaceful surroundings, you won't be disappointed. No a la carte menu, but the chef is excellent and the food delicious.

A stunning Hotel in a most beautiful part of Sici
It is very early days for this hotel ,it opened in Sept 2014 , but what a place , stunning rooms with breathtaking views, fantastic spa and gym , the evening meal and wine was a delight as was the breakfast . The bedrooms are all in keeping with the rest of the period building , but with modern heating and barthrooms .

Hôtel très calme loin du tumulte touristique. Alller à Siracusa prend 30 minutes mais retrouver cet hôtel paisible est un vrai bonheur. La piscine et l’environnement sont très agréables. Les hôtes sont adorables et se mettent en quatre pour vous rendre service. La chambre était spacieuse avec juste un manque de miroir dans la chambre. Ns avons passé un séjour de 3 jours très très agréable avec un bon rapport qualité prix

5 stars and oozing with charm
Probably the most amazing place we have ever stayed. It is stunningly beautiful and oozing with charm. Our apartment was amazing and as for the courtyard, words are not enough. We ate there both evenings simply because the atmosphere was magnetic, the food great and Santo was a gem. We loved his sense of humour and amazing hospitality. Not a place we will ever forget. It was a privilege to be swept up in Borgo del Carato' s absolute charm.

Wir hatten eine sehr erholsame Woche im Borgo del Carato und haben die besondere Atmosphäre dort sehr genossen. Der Besitzer Luigi und sein Mitarbeiter Santo kümmern sich mit viel Engagement um ihre Gäste. Absolut empfehlenswert, wir kommen wieder!

Un borgo da 100 carati!!
Abbiamo soggiornato al Borgo del Carato dal 4 al 7 luglio durante il nostro viaggio nella Sicilia orientale. Sarebbe riduttivo dire che siamo stati benissimo. È stata un'immersione nella Sicilia più vera. Il proprietario è stato gentilissimo, così come tutto il suo staff. Siamo rimasti tutte le sere a cena e abbiamo mangiato benissimo. E che dire della piscina... stupenda. Mio figlio e mio marito hanno anche fatto una passeggiata a cavallo nella tenuta. Lo consiglio sia a chi viaggia in coppia sia a chi viaggia in famiglia.

l'unico appunto che puoi fargli e' che sta un po' nell'interno, se sei il turista solo spiaggia ed hotel lascia perdere, ma avendo un'auto noleggiata vale la pena di fare ogni giorno 20 km da siracusa e dal mare, e' una bella masseria ristrutturata con cura, eccellente ospitalita', camere ben tenute, piccolo ristorante di pregio, molto rilassante, piscina in tufo bianco, pietra locale bellissima ma riflette molto il sole, abbronzatura garantita ma anche scottatura facile se vi addormentate su un lettino senza creme solari come il sottoscritto, segnalo gli ottimi ristoranti che abbiamo provato: Bistrot Bella Vita e Apollonion Osteria a Siracusa, Campisi e Marzenemi,

A hidden gem in the beautiful Sicilian countryside
The very friendly host and owner of this beautiful Borgo did an awesome job. He transformed a ruin into a luxury resort and a place of tranquillity, serenity and natural beauty. We have been staying at Borgo del Carato last week and it was so hard to leave this wonderful place. There is nothing to complain about. Everybody was very friendly and helpful all the time. Even though only the director and the chef spoke english (unfortunately we don't speak italian), everyone else was very nice to us, too! The hotel is a real quiet and peaceful place - perfect to relax. The rooms are very big, beautiful and the bathroom is modern. We also enjoyed having the little dog Boogie as well as the horses around us. The swimming pool was very clean and we enjoyed the nights out there when it was lightened in beautiful colors. The dinner is perfect, if you go to Borgo del Carato you should at least try that once or maybe every evening - it was one of the best dinners we had in sicily. Thanks a lot to the team for making our stay so unforgettable.

Wonderful borgo, some improvements needed
Very nice new borgo. Wonderful pool, very quiet, nice rooms. It is very new though, so some things (sauna not always open, no music in breakfast room when owner is not there, initially we were given the wrong, less attractive maisonettes, which are very dark) can be improved. Keep in mind that the borgo is far away from everything, the nearest restaurant is at least a 15 minutes drive... But that also adds to the attractiveness, it is indeed very quiet, you can only hear the birds sing!
