Tania and her mother prepare an extensive homemade breakfast every morning at their seaside hotel in Pollonia. This was one of the most impressive and authentic breakfasts we have encountered during our travels this year. This wholegrain crusty bread called "barley rusk" and is topped with grated tomato, fresh capers, oregano, sea salt, and a drizzle of olive oil. It's so simple, yet so fresh and delicious. The tomato is usually topped with cheese, but we opted for the vegan version sans fromage.
Perfection in a bowl: warm chickpeas, fresh mint, sun-dried tomatoes, and red onion tossed in a lemon-olive oil dressing. I can't wait to recreate this one once I'm back home!
